Our Sustainability Initiatives

What’s New at Eden

Eden is committed to a sustainable future and improving the well-being of our team, guests, and community. We lead in environmental sustainability through our local farm partnerships, food waste diversion initiatives, culinary techniques, operational advancements, and the continual expansion of our on-site greenhouse.

OpenTable Features Eden for Championing Sustainability

Across the nation, restaurants are raising the sustainability bar, embracing hyper-local sourcing, minimizing food waste, and including more plant-based meals than ever before. Eden has renewed its commitment to eco-friendliness by doubling the size of our onsite greenhouse in order to provide some of the herbs and produce featured on our menu. For everything else, our team sources hyper-locally from Midwestern purveyors and farmers, giving them thoughtful shoutouts on the menu.

Plant-focused & Seasonally-based

Sourcing ingredients in the Midwest let’s us create evolving seasonal menus with fresh, high-quality ingredients. Our relationships with our farmers and purveyors allow us to be aware of what crops are doing really well, are in-season, and can be sourced that week.

Composting Program

Our composting program takes any food scraps or items no longer fit for consumption, collects them, and stores them in bins to be composted. These bins will then be picked up by our composting partner, Wastenot Compost.

Our On-site Greenhouse

At Eden, we enjoy cooking what we grow. Our on-site greenhouse allows us to incorporate an abundance of herbs and other seasonal ingredients on our menus. We’re able to cut down immensely on our carbon footprint by being a walkable distance from greenhouse-to-table.

Supporting Local

Eden continues to embrace and incorporate local flavors. From Nichols Farm tart apples complimenting a pork tagliatelle dish to Esmee arugula, grown by refugee farmers at Global Garden Refugee Training Farm, serving as a bright, peppery garnish, Eden misses no opportunity to source local ingredients.  Chef Devon Quinn makes frequent visits to Green City Market and stays in touch with farmers to stay up to speed on what is growing well for the season, changing the menu based on that information.
