This month’s Sandwich Collab brings you the Croissandwich with Jake Potashnick of Feld. Devon Quinn and Jake first crossed paths as regulars at Green City Market, connecting over great ingredients and the local growers behind them. Built on our organic sourdough croissant from Pastry Chef Josephine LeBozec, it’s griddled in butter and layered with n’duja custard made with Underground Meats n’duja, a butter fried egg from Finns Ranch, J2K Capraio goat cheese, spicy greens from our greenhouse, and a finish of black garlic vinaigrette. A portion of proceeds supports Keshet Chicago, an organization close to Jake’s heart that helps create inclusive opportunities for children and adults with disabilities.
