This month’s collab sandwich is Bruno’s Panini with Jacob Saben of Coda di Volpe, an Italian inspired build rooted in technique and bold, balanced flavor.
Built on Eden’s house made rosemary focaccia, the panini layers in house roasted lonzo cotto with oreganata marinated buffalo mozzarella. The mozzarella is tossed with semi dried tomatoes, taggiasca olives, pickled peppers, and herbs, then paired with sunflower arugula pesto and fresh Esmee arugula for brightness and depth.
Griddled and finished in the oven until crisp and melty, it delivers richness, texture, and herb driven balance in every bite.
A portion of proceeds from Bruno’s Panini will be donated to Alex’s Lemonade Stand, supporting the fight against childhood cancer. Available all May.
